Pure Fer Servadou from Gaillac! Another variety among the long list of local Gaillac varieties worked by Jérôme. It is most notable is some lesser known appellation wines of Gaillac, Marcillac and secondary additions to the likes of many Madiran and Bergerac blends. Fer (Iron in French) refers to the iron-like bark at the foot of each vine, it is a difficult vine to work which is cause for it's decrease in popularity after being ravaged by phylloxera. Lou Servadou is harvested at peak maturity and aged for 2 years in old oak barrel. This cuvée offers perfumed red currants and raspberry, with undertones of cacao husk and undergrowth, the tannins are ripe and there is an overall balance of concentration and freshness.
