Sparkling Gamay from Sébastien! Realised from a press of several hours to slightly tint the juice. Very expressive with fine carbonation. There is an alcoholic heat that comes through on the nose and the palate with it's alcohol in excess of 15%. The nose offers a kirsched or brandied cherry note, with almond skin and yeast. This wine is aged for 20 months on latte, hand disgorged and without dosage. Entremetteuse is a fall time sparkling wine, rich is texture, marked tannic grip and a touch of residual sugar.
