100% Grolleau with 3 weeks of carbonic maceration in whole clusters. Followed by slow horizontal pressing and ageing in fiberglass tank. Back to the rebellious begins of the domaine vinifying without entrants. The initial vintage (2017) saw a stuck fermentation and the wine simply wouldn't finish it's sugars. The end result was a success and the name remained. This is the Grolleau realized from the youngest vines of the domaine. Notes of tonic-like overippe blackberries with a point of reduction, fruit and earth in harmony. Tangy acid, fine tannins and a tingling fizz on the palate add to the fun of drinking Da Ponk.
