Caméléon is issued completely from Sauvignon Blanc harvest a peak maturity. A meticulous work is involved is selecting the correct fruit untainted by rot, taking a portion (10%) and sun-drying it on straw baskets for 3 weeks and a long fermentation to extract all of the aromas of an apricot tart and confit'd orange. It is full and sweet with a balance of freshness with a slight fermentation in bottle that lends a tiny sparkle. Full and sweet but fresh with kick of alcoholic heat. Digestif wine…..foie gras, cheese, lacquered duck and spice.
